Cooking Up Nigerian Jollof Magic
Ingredients:
- 2 cups of long-grain rice
- 4 large red bell peppers
- 3 large tomatoes
- 3 hot peppers
- 1 large green pepper
- 2 large onions
- 3 cloves of garlic
- A small cut of cabbage
- Green beans, peas, carrots (chopped)
- 1 large Irish potato (chopped)
- Salt, curry, and thyme
- 2 large Maggi cubes, 1 Roico cube, and 2 Know cubes
- Vegetable oil
- One pound of beef
Step-by-Step Instructions:
1. Begin by washing the meat and placing it in a pot. Add water, a teaspoon of salt, a dash of curry and thyme, 1 Roico cube, and half of a chopped onion. Boil the meat until it's tender, creating a flavorful stock in the process.
2. Parboil the rice and set it aside for later use.
3. Create the base sauce by blending the bell peppers, hot pepper, tomatoes, half an onion, and 2 cloves of garlic. Pour the mixture into a pot and let it simmer until it's reduced.
4. In another pot, sauté the remaining garlic and half of the onion with two tablespoons of vegetable oil for about five minutes. Add the chopped green beans, peas, carrots, and Irish potatoes, continuing to fry until the oil separates and the mixture turns darker.
5. Incorporate the tender meat along with its stock, the remaining seasoning cubes, a touch of curry, thyme, and a teaspoon of salt. Cook this medley for approximately 5 minutes.
6. Gently add the parboiled rice to the mixture, ensuring an even distribution. Cook the rice on medium heat for about 15 minutes, allowing it to absorb the flavorful essence of the ingredients.
7. As a finishing touch, toss in the chopped remaining half of an onion, green bell pepper, and cabbage. Mix the ingredients well, cover the pot, and reduce the heat to low. Let it simmer for an additional five minutes.
8. Turn off the heat and let the pot remain covered on the stove for an extra 10 minutes before serving. This step ensures that the flavors fully develop and mingle, resulting in an explosion of taste.
